Golden Sugee Cookies

Clarified butter creates the magic for this light yet flavourful morsel. The addition of icing sugar enhances the texture of the cookie.

Ingredients

Plain Flour                200g
Ground Almonds     100g
Billington’s Golden
Caster Sugar               50g
Billington’s Golden
Icing Sugar,Sifted      50g
Salt                          1/4 tsp
Ghee                            150g

Method

1. Whisk plain flour, ground almonds, golden caster sugar, sifted icing sugar and salt together.
2. Stir in ghee, 1-2 spoons at a time. Gather into a ball. Clingwrap and flatten dough. Chill until slightly firm, about 15min.
3. Roll into teaspoon-sized balls and flatten gently with a fork. Bake at 160-170°C for 16-18min or until light golden.
