California Raisins Financier

This recipe is the first recipe from “A California Raisin Symphony by Chef Alicia Wong”.

This recipe will give you a light and moist financier and the California raisins will provide a hint of sweetness, perfectly balanced with the rest of the ingredients.

Hot Earl Grey Tea

Trehalose

Fine Granulated Sugar

Salt

Almond Powder

Cake Flour

Method

1. Soak the California Raisins in Hot Earl Grey Tea overnight. Strain well before use.

2. Prepare “Beurre Noisette”. Set aside and let it cool.

3. Put all the remaining ingredients into a food processor. Blend well.

4. Add in lukewarm “Beurre Noisette” in 2 to 3 intervals to incorporate into the batter.

5. Rest overnight in the fridge for the best baking results.

6. Fill the baking cavity with financier batter and sprinkle the prepared California Raisins into each cavity.

7. Bake at 180°C for 10 to 15 minutes.

8. Allow to cool before serving.
