Lavender Cookies

INGREDIENTS

BK Plain Flour              100g
Corn Flour                   20g
BK Culinary Lavender   1 tbsp (lightly pounded)
Vanilla Extract             1/2 tsp
Lavender Sugar           70g
Salted Butter               113g
Zest of 1 lemon

* Lavender Sugar: Mix 1 tbsp of dried lavender in 1 cup of caster sugar and sit for 24 hours before using.

Lavender Cookies

Directions:

1.Preheat oven. Cream softened butter together with lavender sugar and lemon zest. Add in Vanilla extract and mix till just combined. Do not overmix.

2.Fold in flour and dried lavender.

3.Roll out the dough between to sheets of parchment paper. Chill in the freezer for at least 30mins.

4.Remove from freezer, rest for a minute before cutting the dough with a cookie cutter. 

3.Bake at 175 °C for about 15-20 minutes.
