Wholemeal Apple Tea Cake


125g Wholemeal Flour

¾ Teaspoon Baking Powder

80ml Grape Seeds/Corn Oil

50g Honey

¼ Teaspoon Salt


Apple Filling:

1 Medium Apple (200g), thinly sliced

1 Tablespoon Golden Raisin

1 Tablespoon Lemon Juice

¼ Teaspoon Cinnamon Powder

1 Tablespoon Brown Sugar

Wholemeal Apple Tea Cake

  1. In a small saucepan cook apple, raisin, lemon juice, brown sugar and cinnamon powder on medium low heat for about 5 minutes or till apple soften. Remove from heat and cool to room temperature.
  2. In a mixing bowl, mix oil, honey and salt using a whisk then stir in sieved flour and baking powder till combined.
  3. Lastly add in apple fillings and stir till well mixed before transferring it to the greased loaf tin. 
  4. Bake batter in preheated 160 degree celsius oven for 30 minutes or until a skewer inserted in the centre and comes out clean.

Tip: Before baking you can sprinkle some extra cinnamon sugar on the cake batter to create a caramelised effect and taste.
