Sweet Potato Braided Loaf


Bake King Bread Flour               300g
Water                                      165g
Plain Yogurt                               30g
Salt                                            3g
Sugar                                         45g
Instant Yeast                                3g
Butter                                        25g

Sweet Potato Powder                   20g
Water                                         20g 




Sweet Potato Braided Loaf


  • Combine all ingredients (A) except butter and knead till a smooth dough forms.
  • Add butter and knead till window pane stage.
  • Portion the dough into 2. 
  • Combine ingredients (B) into a smooth paste. Place 1 portion of the dough into the mixer and add in (B). Knead with the dough hook till combined.
  • Place each dough in a greased bowl and proof for 60mins.
  • Flatten and roll out each dough portion into a rectangle. Place the sweet potato dough on top of the white dough.
  • Using a scraper, cut the dough into half and stack. Repeat again.
  • Not cutting through at the top, cut the dough into 3 and braid from the top. 
  • Tuck the front and the end of the braid at the base of the dough.
  • Place in a greased loaf tin and proof for 60mins.
  • Bake in a preheated oven at 170 degrees for 35-40mins.
