PANDAN SNOWSKIN MOONCAKE WITH LOTUS PASTE

Mix the Snowskin Mix, shortening, cold water and pandan paste together until well combined. Mix and knead until a soft dough is formed.

Cut the dough into small pieces of about 70g for large mooncakes or 20g for mini mooncakes. Flatten the dough with a rolling pin to form the skin of the mooncakes.

Take 110g (or 40g for mini mooncake) of the lotus seed paste, add a few melon seeds and roll the paste into a round ball.

Wrap the snowskin over the lotus paste ball, making sure to completely cover the lotus paste. Carefully press excess skin all around to stretch it over the lotus paste ball, so that the skin is not too thick and there is no lotus paste showing.

Coat the mould with glutinous rice flour so that the mooncake will not stick to the mould. Press the mooncake ball firmly into the mould to get the imprint of the mould and then push the moulded mooncake out gently.

You can customize your dough/filling proportions according to the size of your mooncake mould (small/medium /large). Dough is about 40% vs 60% filling to make up the whole mooncake.
