Osmanthus Tea Cupcakes w/ Cream Cheese Frosting

INGREDIENTS

Osmanthus Tea Cupcake

75g Self Raising Flour

50g Billington's Golden Caster Sugar

3 Fingered Pinch of Salt

55g Unsalted Butter

50g Egg

50g Osmanthus Tea Liquid (Strained Before Measuring)

50g Bake King Ground Almond

2g Baking Powder

Cream Cheese

90g Cream Cheese, Softened

90g Unsalted Butter, Softened

50g Icing Sugar

1tbsp Osmanthus Tea Liquid (Strained Before Measuring) 

 

 

Osmanthus Tea Cupcakes w/ Cream Cheese Frosting

Osmanthus Tea Cupcake

  1. Whisk self raising flour, caster sugar and salt together.

  2. Rub or mix in butter.

  3. Mix in egg and tea liquid.

  4. Fold in ground almonds and baking powder.

  5. Divide batter into 6 cupcake cases and bake for 16-17min in a preheated 170oven. The cupcakes are done when a toothpick inserted in the center comes out with a few loose crumbs attached.

  6. If you wish, you can further pour 1tbsp of osmanthus tea liquid over the surface of each cupcake while the cupcakes are still hot

Cream Cheese Frosting

  1. Mix cream cheese, icing sugar and osmanthus tea liquid together until smooth.

  2. When the cupcakes are cool, decorate with cream cheese icing and osmanthus flowers!
