Matcha & Pistachio Nuts Butter Cookies

INGREDIENTS

Bake King All-Purpose Plain Flour 350g

Japanese Matcha Powder 15g

Unsalted Cold Butter, cut into small cubes 250g

Icing Sugar 150g

Medium Egg, lightly beaten 1

Pistachio Nuts, toast and chopped 50g

Matcha & Pistachio Nuts Butter Cookies

  1. Place butter in a mixing bowl together with sieved ingredients (flour, matcha powder and icing sugar);  mix the mixture together using rubbing-in method or pastry blender till it resemble breadcrumbs. 
  2. Slowly drizzle in beaten egg and fold the mixture together using a spatula.
  3. Stir in chopped pistachio nuts and continue to stir until it forms a dough
  4. Roll the dough between two sheets of baking paper to form oblong/square shape. Chill in the refrigerator for at least 2 hours or overnight for better flavour.
  5. Cut dough into 5mm slices; place it on baking tray lined with baking paper.
  6. Bake cookies in preheated 200°C oven for 10 - 12 minutes until golden in colour.
  7. Cool them completely on a cooling rack before storing.

 

*Note: Alternately use a food processor to blend all the ingredients together to form a dough.
