INGREDIENTS

Gula Melaka, chopped

110g

Thick Coconut Milk

130g

Pandan Leaf

1-2 pieces

Egg Yolk

30g

Bake King Pandan Coconut Essence

1tsp

Bake King Kueh Bangkit Mix

1 packet

GULA MELAKA KUEH BANGKIT COOKIES

Boil gula melaka & coconut milk until the gula melaka has dissolved. Remove and cool completely. Set aside 2-3 tbsp to adjust cookie dough mix consistency if it becomes to dry/wet.

Add in egg yolk and pandan coconut essence. Lastly add in Kueh Bangkit mix and mix well. Knead until the dough is smooth and a little dry.

Use a mould or cookie cutters to cut into the required shapes. Pinch the cookies into various designs with a crimp tool.

 Bake in a preheated oven at 170 C for about 15-20 minutes.
